1. Shaffa GastroBazar – Balangan
The northern end of the run, ten minutes up the coast from Bingin, and the only kitchen here with prawns on the toast: prawns, scrambled eggs and sun-dried tomato at 110k. The salmon version with spinach and a poached egg is 115k. Both come on sourdough baked in the same wood-fired kitchen that does the rest of the menu, which is why the bread holds up under all that. Breakfast runs until two.

2. Seed Bingin – Bingin
Up the hill from Bingin beach and the one that treats it as lunch rather than breakfast: the catch of the day on avocado with ginger and lemon sauce, seasonal fruit alongside, 100k. Comes out looking like a plate rather than a snack.

3. Saltwood – Bingin
Bingin, and the only rye bread on this list. Whipped feta, tomato and dill, 100. The rye is the point: it stays crisp under the avocado instead of turning to paste by the third bite, which is the failure mode of every soft-sourdough version on the island.

4. Milk & Madu – Uluwatu
On the Labuansait strip, open from half six in the morning, which makes it the first kitchen here to serve anything. Smashed avo toast sits on a breakfast menu alongside ricotta cakes and the big fry-up. They do not publish the composition, so ask what comes with it.
