Babi guling is the one Balinese dish most visitors have heard of before they land: a whole young pig, stuffed with spice paste, roasted on a spit until the skin cracks. It is eaten at lunch, sold from warungs that do almost nothing else, and it runs out. What is babi guling, and what comes on the plate
Be guling, in Balinese, is a young pig roasted whole on a spit. The belly is stuffed with a spice paste of turmeric, chilli, garlic and ginger, with vegetables such as cassava leaves, and the pig is turned over the fire for hours until the skin goes brown and hard. Guling means to roll or turn. It began as ceremonial food, cooked for temple festivals and family rites, and Gianyar, the regency around Ubud, is the one most associated with it. Today it is sold every day from warungs that make little else.
Order nasi babi guling and you get a plate, not a slice. Rice, a few slices of the roast meat, a shard of the crackling, fried pork, and lawar: long beans or young jackfruit chopped with grated coconut, spices and minced pork. Red lawar has blood mixed through it; white lawar does not. Most places add urutan, the Balinese pork sausage, and a bowl of soup, usually a pork bone broth. The special or complete version adds more of everything, often satay.
It is spicy by default. The sambal is usually already on the rice, so if you want to control the heat, ask for it on the side before you order. At the warungs on this list a plate costs between about 25,000 and 60,000, and a few ask more.

Babi guling in Ubud and Gianyar, where it comes from
Gianyar is the regency around Ubud and the reputation starts here. Most of Ubud's warungs are a lunch; Ibu Gendut is the exception, and the two further out are for an early start and a late night.

The room is large, the view is paddy, and the menu goes past the pig: sate lilit, a pork soup, and be genyol, the fried pork regulars order alongside. A couple of minutes from the palace, and where locals come at noon. You order at the counter on the street and carry the plate upstairs; the third floor is the one to aim for, cooler and looking over the roofs. Three portion sizes, the smallest listed at 35,000. Open half ten to half four, and reviewers say the skin can be gone after one. Two things to know: 10% is added to the bill without the menu saying so, and the green chilli on the side is very hot.

3. Babi Guling Ibu gendut – Mas, Ubud

The one to go to for dinner. Most babi guling in Ubud is a lunch; this one runs from nine in the morning to ten at night, 4.7 across twelve hundred ratings. Reviewers come back for two things besides the pig, grilled pork ribs and a pork satay they call the most tender they have had, and the soup comes free. Reviewers mention the owner almost as often as the food. A few long-time regulars say prices have gone up and portions down since 2021.

4. Warung Babi Guling Ibu Oka 3 – Ubud

The name most visitors arrive knowing, and the most honest note on this page. Ibu Oka now runs three branches and the rating has slid to 3.8. The reviews say why: the skin is often sold out by mid-afternoon, plates late in the day arrive cold, and it is cash only. If you go, go to this one, the third branch at the end of an alley on Jalan Tegal Sari, for the room: long and open over a stream and trees, cooler than anywhere in central Ubud. Go before one. Around 60,000 to 65,000 a plate.

5. Babi Guling Bu Desak Sapat – Tegallalang

Open from five in the morning, closed by eleven. This is the babi guling for the day you are up early anyway, for the rice terraces or on the way down from Kintamani. There is a queue before the doors open and a sign saying nobody comes in before five. A mixed plate is 35,000, and reviewers say that arriving around six means you still see the whole pig and get every part of the plate. The queue itself is the complaint in almost every bad review: there is no system, so hold your place.

6. Babi Guling Pande Bangli – Bangli

Beyond Ubud, and open again at night. Bangli is the regency on the road up to Kintamani, and this stall runs two services, nine to one and then seven in the evening to three in the morning. Locals drive up from Denpasar for it, and on a busy night the queue runs out of the door. The plate is big, with lawar, fried pork, crackling and skin; one Bangli regular recommends the kikil, the pork leg. It is a small, hot room, and the drinks are bottled tea and water.

The best-rated babi guling in the south on this page, at 4.7. A standard plate is about 45,000. The most reviewed babi guling we found, on Sunset Road. Nearly ten thousand ratings at 4.4, and the easy one: a big car park, quick service and an air-conditioned room upstairs. The spice is stronger than most, and reviewers say you can ask for it less hot. Plates run about 50,000 to 80,000 a person. It also sells frozen babi guling to take away. The complaints are about portions: a few visitors found the special smaller than they expected.

Not quite babi guling, and worth the detour for that. Samsam is roast pork belly rather than the whole pig on a spit: the skin crisp, the fat and meat underneath still juicy. The special mixed plate, about 55,000 with a drink, puts samsam, roast pork, satay and lawar together with a bowl of soup. It is busy at lunch and dinner and hot inside, with fans rather than air-conditioning. Ten to five, then six to ten.

10. Warung Babi Guling Bu Dayu Kencani – Kuta

Open until two in the morning. A roadside warung on the veranda of a shophouse on Jalan Raya Kuta, busy with Gojek drivers at every hour, which tells you most of what you need to know. About 35,000 to 45,000 a plate, a sambal reviewers rate, and no restroom. The skin is the weak point: on some nights it is soft, or swapped for crackers.

The cheapest way in, and open from half six. A takeaway pack starts at 15,000, or 20,000 with satay, and a plate at the table runs 25,000 to 50,000. Grab drivers name it as their favourite. It is cash only, a bank transfer has a 50,000 minimum, and parking costs a few thousand. The skin and crackers are not always in the pack, so check before you leave.
