Hummus is the easiest thing on a menu to fake. Chickpeas, tahini, lemon, garlic, and any kitchen can put a beige swirl in a bowl, drizzle oil over it and charge you eighty thousand for the privilege. The difference between that and the real thing is texture and temperature. Proper hummus is smooth to the point of being almost liquid, and it arrives warm, not cold out of the fridge.
Bali has both versions in quantity, and they come from two different directions. The Arabic and Greek kitchens serve it as the base of a mezze, warm, with pickles and bread, and it is the thing the rest of the table is built around. The cafes serve it as a dip: cold, thicker, next to crudites, and perfectly nice if that is what you wanted.
